Cottage Cheese Vegetable Lasagne

Vegetable Lasagna A healthy meal calls for lots of vegetables and nutritious products in our diet and what could be a better way to incorporate multiple vegetables together than in a vegetable lasagne.

Serves: 6-8 people

Ingredients:

-500g Pumpkin, peeled & sliced
-800g Pre prepared Tomato Pasta sauce
-1 Tblsp Olive Oil
-2 Cloves Garlic, crushed
-300g Spinach leaves, washed & chopped
-1 Tub of Original Cottage Cheese
-1 tea spoon of Tuscan seasoning
-3 Eggs
-1 cup Parmesan Cheese, grated
-6 Fresh Lasagne sheets

Method:

-First of all pre-heat oven to a temperature of 170 degree centigrade.

-Now take a large sauce pan and place a sliced pumpkin into it along with tomato pasta sauce. Let it simmer over low heat for about 10 minutes.

-Next heat a table spoon of olive oil in a frying pan over medium heat. Saute garlic in it for around a minute then add spinach leaves to it. Stir it well until the spinach is wilted. Remove the pan from heat and let it cool down.

-Now add cottage cheese, eggs, seasoning and half of the parmesan cheese in a large bowl. Mix these ingredients well and lastly fold it through the wilted spinach leaves.

-Take a deep (24 cm) square baking dish and put half of the pumpkin mixture into it as a base. Cover this with half of the cottage cheese mixture and top it again with a lasagne sheet. Put another layer of pumpkin mixture over it, covering with a lasagne sheet again. Repeat the layering with finally ending it with cottage cheese and spinach mixture.

-Lastly, garnish it generously with parmesan cheese and bake uncovered in a pre heated oven with 180 degrees centigrade of temperature for about 30 mins. Make sure the lasagne turns golden brown by time it is baked.

-Serve it hot with your favorite salad and crusty bread.
